It is my first post for the food section of my blog and i realized that i had so many recipes to write that i should have started a bit earlier! I will try through this section to show you some of the things i cook and bake…i am by no means a professional (and i wish i was!) but i love trying new recipes and eat new things that i try my best to make them as good as possible! A lot of the things i make are greek recipes (some will follow soon) since it is the food and desserts from my country that i miss the most (and i also found two great online shops for greek products that can get me anything i find back home) but i try also new recipes from all over the world!
One thing i really love is desserts…give me a nice slice of cake or cookies or even a good chocolate and i can barely resist! An alternative for dessert that i love the last months are the oatmeal energy bites and i cannot believe how i only found them so late (where was i all these years??)! I try to make them with different combinations and this way i get to have some variety. I eat them whenever i want something sweet at work (and this way i avoid all the cakes and cookies flying around all the time) or before my workout since they give me energy.
So today i decided to share with you my recipe for my Oatmeal Energy Bites perfect for sweet cravings!
To start with you need to make the base, from good oats, nut butter, honey and dates. From then the possibilities are endless, depending on your taste and preference. I love to have some with raisins, since i like the combination with dates and also some covered with chia seeds or cocoa. I make small size bites so that i can grab 2 of them and i keep them in the fridge inside a container that closes well.
The recipe is simple and it only takes 30 minutes in total, 10 minutes to put the bites together and another 20 minutes to let them rest in the fridge! There are a bit sweet so if you want you can cut back on the dates or the honey! And just like that you have a perfect energy ball that you can eat as dessert, as a pick me up during the day or even as breakfast when you are on the run and don’t have time!

Recipe (20-24 small size bites)
1 cup rolled oats
1 cup soft dates
1 table spoon honey
1 table spoon peanut butter
1/2 table spoon water
drop of vanilla
chia seeds and raisins
In a food processor mix oats, dates, honey, peanut butter, water and vanilla and process until everything is blended well.
Form a dough from the mix, separate into two parts, add in one of them raisins and mix well. Wrap dough with cling film and keep in the fridge for 20 minutes.
When the dough is solid, make small bites (keep your hands wet with water if you find the dough sticky) and cover some with chia seeds. Keep them in the fridge in a container for maximum 2 weeks. Enjoy!
